Generally found in deep water, Mutton Snapper is our personal favorite tasting snapper the Keys have to offer. Reaching sizes up to 25 pounds, Mutton Snapper are one of the largest Snappers in the Florida Keys. They are tinted red in color with tan or green backs, with a prominent dot on their tails. Mutton Snapper share a high demand in seafood & sushi restaurants because of their white texture meat. Mutton Snapper are most abundant when they spawn in the summer months on full moons, but are caught year round.
